Middlins

Middlins are a nod to Southern traditions, a rich and creamy risotto-like dish made from broken bits of white rice. Congaree and Penn middlins have become a superstar ingredient at James Beard Award dinners and the like, but the wholesome warmth of this comfort food is timeless. Just add butter, salt and milk.
