
Family Recipes: Banana Pudding

Banana Pudding

Banana pudding is a ubiquitous Southern dessert, serving it is basically the way to say you're Southern without saying you're Southern. The dessert is both a riff of an English trifle and closely tied to Caribbean and West African recipes. Four generations of women in my mother's family hail from North Carolina, and I remember always looking forward to eating it at family gatherings - as a kid, I didn't like bananas any other way!
Ingredients:
Vanilla Pudding (makes 4 cups):
- 2/3 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 6 large egg yolks
- 3 cups whole milk
- 1 tablespoon softened, unsalted butter
- 1 tablespoon vanilla extract
- pinch of nutmeg
- 1 Box Nabisco Nilla Wafers
- 5 (firm) ripe medium-sized bananas, sliced
- Whipped Cream (homemade or store-bought)
Directions:
Make Pudding:
- Whisk together sugar, cornstarch, salt, and egg yolks in a saucepan over medium heat.
- Slowly whisk in milk as the mixture summers, until smooth and thickened.
- Add butter, vanilla, and nutmeg.
- Remove from heat. Let cool and chill in fridge for at least 3 hours or overnight.
Assembly:
- Grab a trifle bowl, a deep pie plate, or 9x13 glass baking dish. Create alternating even layers of pudding, wafers, and banana slices.
- Top with whipped cream, crumbled wafers, and a sprinkle of cinnamon if you like.
