Family Recipes: Banana Pudding

We’re not shying away from desserts that call for bananas.

If you’ve got the mains covered, but you’re looking to add a new spin to your holiday sides and desserts, take a jaunt down memory lane with this series featuring three of Team East Fork’s favorite family holiday recipes.

Banana Pudding

Banana pudding is a ubiquitous Southern dessert, serving it is basically the way to say you're Southern without saying you're Southern. The dessert is both a riff of an English trifle and closely tied to Caribbean and West African recipes. Four generations of women in my mother's family hail from North Carolina, and I remember always looking forward to eating it at family gatherings - as a kid, I didn't like bananas any other way!

Ingredients:

Vanilla Pudding (makes 4 cups):

  • 2/3 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 6 large egg yolks
  • 3 cups whole milk
  • 1 tablespoon softened, unsalted butter
  • 1 tablespoon vanilla extract
  • pinch of nutmeg
  • 1 Box Nabisco Nilla Wafers
  • 5 (firm) ripe medium-sized bananas, sliced
  • Whipped Cream (homemade or store-bought)

Directions:

Make Pudding:

  1. Whisk together sugar, cornstarch, salt, and egg yolks in a saucepan over medium heat.
  2. Slowly whisk in milk as the mixture summers, until smooth and thickened.
  3. Add butter, vanilla, and nutmeg.
  4. Remove from heat. Let cool and chill in fridge for at least 3 hours or overnight.

Assembly:

  1. Grab a trifle bowl, a deep pie plate, or 9x13 glass baking dish. Create alternating even layers of pudding, wafers, and banana slices.
  2. Top with whipped cream, crumbled wafers, and a sprinkle of cinnamon if you like.
